Chickpea Buddha Bowl

Recipe:

1 cup of cauliflower

half of an avocado

1 cup of kale

2 tbsp. of chickpeas

1 tbsp. of store bought pickled red onions

1 egg

Preparation:

Preheat oven to 400°

cut cauliflower into mini florets

place cauliflower and chickpeas on baking sheet

add a sprinkle of coconut oil and add chili flakes and salt for flavor

sautée kale in saucepan on low - season with olive oil and garlic salt

add 1 refrigerated egg into boiling water

cook for 6 minutes and then rinse and peel - cut in half and season with chili flakes

Breakfast Eggs

Recipe:

2 eggs

half an avocado

5 cherry tomatoes

Preparation:

crack eggs in warmed up saucepan on low

flip each egg after 5 minutes

smash avocado with fork and evenly spread

add tomatoes cut in half on top of avocado

top off with eggs and chili flakes

Preparation:

Vegetarian Heaven

Recipe:

quarter of a sweet potato

1 cup of spinach

quarter of an avocado

2 tbsp. of Siracha hummus

2 eggs

Preparation:

preheat oven to 375° for sweet potatoes - add coconut oil an chili flakes

place 2 refrigerated eggs in boiling water - cook for 6 minutes then rinse in cold water and peel - cut into halves

sautée spinach in saucepan with olive oil and garlic on low

top with a sprinkle of Everything seasoning

Recipe:

1/2 of a red beet diced

2 tbsp. of canned hearts of palm

5 cherry tomatoes diced

quarter of an avocado diced

4 cucumber slices diced

1 tbsp. of red onion diced

2 tbsp. of chickpeas

topped with lemon juice, 1 tbsp. of olive oil, balsamic vinaigrette and garlic salt

Recipe:

1 portion of Atlantic Salmon Fillet

1 tbsp. of teriyaki sauce

2 tbsp. of soy sauce

1 tap of chili powder

1 cup of udon noodles

quarter of an avocado

sesame seeds

sesame oil

2 scallions

1 cup of spinach

Preparation:

preheat oven to 400°

mix teriyaki sauce, soy sauce, and chili powder in bowl

drench salmon in marinade - let sit for 15 minutes

add noodles to saucepan for 8 minutes - add a few drops of sesame oil and garlic salt

sautée spinach in saucepan - add garlic salt

top with sesame seeds
